In a heatproof bowl, add unsalted butter and dark chocolate. Melt together over a pan of simmering water, making sure the bottom of the bowl does not touch the water. Alternatively, melt in the microwave in 30-second bursts, stirring in between. Stir continuously until the mixture is completely smooth and glossy. Set aside to cool slightly, it should be warm but not hot, so you don’t scramble the eggs in the next step.

Step 3: Whip eggs and sugar.
