Why this easy lasagna recipe works:
Every ingredient in this lasagna has a job to do, and when they come together, the flavors sing.
- Fresh or dried lasagna sheets: Fresh pasta gives a tender bite, while dried pasta softens perfectly in the oven.
- Ground Beef (12% fat): Juicy and flavorful, it provides the heart of the ragu.
- Pancetta or bacon: Adds a smoky, salty depth that boosts the beef.
- Onion, carrot, and garlic: Create a sweet and fragrant base to balance the tomato acidity.
- Tinned chopped tomatoes, passata, and red wine: Combine to form a rich, hearty sauce.
- Herbs (1 tsp dried basil, oregano, thyme, rosemary): Infuse the ragu with authentic Italian flavor that makes the dish taste like it’s been simmering all day.
- Fresh basil sprig for garnish: Adds a fragrant, colorful finishing touch when serving.
- Béchamel (butter, flour, milk, nutmeg, parmesan): Silky smooth and creamy, this sauce brings balance and richness.
- Cheddar topping: Melts into a golden, bubbly crust no one can resist.
It’s this balance of meat, sauce, herbs, and cheese that makes this one of the best homemade lasagna recipes for busy families or casual entertaining.
Method
Step 1: Prepare Ingredients
Start by dicing the pancetta, onion, and carrot, crushing the garlic, and grating both cheeses. Measure out 1 tsp each of dried basil, oregano, thyme, and rosemary. Preheat your oven to 180°C (350°F). Prepping ahead makes the cooking process smooth and stress-free.

Step 2: Cook the Vegetables
In a large pan, heat a splash of oil over medium heat. Add the onion and carrot and cook for about 5 minutes until soft and translucent. This forms the sweet, fragrant foundation of your ragu.
Step 3: Brown the Meat
Add the ground beef and pancetta to the pan. Cook for 5–10 minutes, stirring often to break up the meat, until browned and slightly crisp in places. Browning is key for a rich, meaty flavor.
Step 4: Add Herbs and Stock
Stir in the dried basil, oregano, thyme, rosemary, and crumble in the beef stock cube. Cook for another minute to release their aromas and infuse the sauce.
Step 5: Simmer the Ragu
Pour in the chopped tomatoes, passata, and red wine. Stir well, reduce heat, and simmer for 20 minutes until thickened and glossy. This slow cooking step develops a deep, hearty sauce that will soak into the pasta perfectly.

Step 6: Make the Béchamel
In a small saucepan, melt the butter over low heat. Stir in the flour to form a smooth paste. Gradually whisk in the milk until thickened and lump-free. Add a pinch of nutmeg and parmesan, cooking another 2–3 minutes until silky. This sauce will bring creaminess and balance to every layer.

Step 7: Assemble the Lasagna
Spread a layer of ragu in the bottom of an ovenproof dish, followed by pasta sheets, then béchamel. Continue layering until all ingredients are used, finishing with béchamel on top. Layering carefully makes sure each slice holds together beautifully.

Step 8: Bake
Sprinkle cheddar cheese over the top and bake for 30–40 minutes until golden, bubbling, and irresistible. Let it rest for 5 minutes before serving, then garnish with a sprig of fresh basil for that final touch.
Serving Suggestion:
Serve your homemade lasagna with crusty garlic bread and a crisp salad tossed with olive oil and balsamic vinegar. A glass of red wine pairs wonderfully with the rich ragu. Leftovers can be reheated for a quick, hearty lunch the next day, making this recipe ideal for both family dinners and meal prep.
