Step 1. Prepare the chicken
If your chicken is not already cooked, gently boil it in lightly salted water until fully cooked through. Once cooled slightly, shred it using two forks into bite sized strands. Shredded chicken works best because it absorbs the seasoning and distributes evenly through the filling.
Step 2. Dice and soften the vegetables
Finely dice the red pepper and onion so they cook quickly and blend nicely into the filling. Add them to a frying pan over low heat and cook slowly for about 10 to 15 minutes until softened and the onions turn translucent. If the onions begin to brown before the peppers are fully soft, add a small splash of hot water and let them steam gently.
Step 3. Build the flavor base
Add paprika, chili powder, garlic powder, salt, and pepper to the softened vegetables along with tomato paste and a few drops of hot sauce or tomato sauce. Stir everything together for 1 to 2 minutes so the spices bloom and the tomato base thickens slightly. The mixture should be moist and flavorful but not overly saucy.
Step 4. Combine the filling
Transfer the vegetable mixture into a bowl and add the shredded chicken. Mix thoroughly so the seasoning coats everything evenly. Allow the mixture to cool for a few minutes before adding the shredded cheese so it stays intact instead of melting too early.
Step 5. Assemble the quesadillas
Lay out the tortillas and place one quarter of the filling onto one half of each tortilla. Fold the tortilla over to create a half moon shape, pressing gently so the filling spreads evenly without spilling out.

Step 6. Cook until crisp and melty
Heat a dry frying pan over medium heat and place a folded quesadilla into the pan. Cook for 2-3 minutes on each side until the tortilla turns golden brown and crisp while the cheese inside melts perfectly. Repeat with the remaining quesadillas and serve hot.
