Why This Green Bean Casserole Recipe Works
- Green Beans – Fresh, snappy beans give the dish its signature crunch and vibrant color.
- Mushrooms – Earthy and savory, they bring umami that pairs beautifully with the sauce.
- Seasonings – Adding onionand garlic powder makes the base extra flavorful and aromatic.
- Homemade Roux Sauce – Butter, flour, and milk come together to form a smooth, creamy white sauce that feels comforting without being heavy.
- Breadcrumbs & Cheese – This golden, crunchy topping adds texture and a burst of cheesy flavor.
Method:
Step 1: Sauté the vegetables
Heat a drizzle of oil in a frying pan over medium heat. Add the diced mushrooms and green beans, cooking just until the mushrooms release their juices and the beans turn bright green. This builds layers of flavor while keeping the beans crisp. Set aside.

Step 2: Make the roux
In a saucepan, melt the butter over low heat. Once melted, add the flour and stir constantly with a wooden spoon or whisk until you get a smooth paste. Cook for about 1 minute to eliminate the raw flour taste.
Step 3: Build the sauce
Add the onion, garlic, salt and pepper and slowly pour in the milk while whisking continuously to prevent lumps. Keep stirring until the sauce thickens into a smooth, creamy consistency. This white roux sauce will coat the veggies beautifully.

Step 4: Combine everything
In a large ovenproof dish, add the sautéed onion, mushrooms, and green beans. Pour the sauce over the top and stir gently until everything is evenly coated.
Step 5: Add the topping
Add the cheese to the top and sprinkle over the breadcrumbs, you can add crispy onions if youd like but dont add these until 10 minutes before the end of cooking as they will burn if you add them now. This will bake into a crisp, golden crust that contrasts perfectly with the creamy filling.
Step 6: Bake to perfection
Bake in a preheated oven at 375°F (190°C) for 30 minutes, until the topping is golden and the sauce is bubbling at the edges. Allow to rest for 5 minutes before serving.
